Fruity salsa. I’ve done it before and I’m doing it again. Because every salsa deserves a pop of sweetness. This salsa is extra special and summer-y though. It not only rocks the tropical sweetness from the pineapple, but the cucumbers give it a lovely, refreshing crunch. And when scooped up by a crispy blue corn tortilla chip, that perfect crunchy, juicy bite is just inevitable.
Of course, I had to bring a teeny bit of heat too. Chopped jalapenos will do the trick. Just be sure to remove the seeds and ribs or else you’ll be booking it to the fridge for some milk. But maybe you like that level of insane spiciness (Mom, Dad, I’m talking to you). In which case, you would want to leave in those parts.
The flavor combo is a bit unique. Maybe I just so happened to pick up a pineapple and ginormous English cucumber from Costco and decided to test my culinary creativity out of sheer boredom. I think I passed the test though. This salsa just screams SUMMER! It’s the perfect, easy-to-prepare appetizer for any upcoming potlucks and gatherings or perhaps the annual salsa recipe showdown at my workplace. I think this could be a contender in the Most Creative category!

- 2 cups chopped fresh pineapple
- 1 cup chopped cucumber
- ¼ cup finely chopped red onion
- 1 clove garlic, finely chopped
- ¼ cup chopped fresh cilantro
- 2 jalapeño peppers, finely chopped (seeded and stems and ribs removed)
- juice of 1 lime
- dash of salt and pepper
- Combine all ingredients in a large bowl.
- Mix thoroughly.
- Serve chilled.
