A couple months ago, a little lunch trend started in our house. Lunch boxes were coming home containing sandwiches with one bite taken, half eaten portions of fruits/veggies, empty fruit snack pouches (obviously), and all the cheese crackers gone (of course). On good days, I’d find all of the above with the exception of a partially eaten sandwich with only the bread remaining.
I concluded that the bread was just a barrier to get to their beloved honey ham and cheese and that maybe we could try skipping the fruit snacks and crackers and opt for something healthier. The plan: hit the reset button on side options and offer fresh fruit and veggies and popcorn. And if the meat and cheese is all they’re after in a sandwich, I thought that skewers would be a fun way to serve those items and a great way to add a little variety to the meal.
Today’s post is full of healthy lunch skewer ideas that will appeal to kids and adults alike. With fresh fruits and veggies, cheese, and a few common dinner leftovers, I’ve switched up our lunch routine through the magic of skewers! Here are 5 tasty ideas:
Leftover chicken breast + celery + carrots + ranch dressing + buffalo sauce
Deli ham + pineapple chunks + swiss cheese cubes + (gluten-free) teriyaki sauce
Leftover turkey burger + cheddar cheese chunks + grape tomatoes + pickle chips + ketchup + mustard
Leftover chicken breast + grape tomatoes + cucumber slices + lemon juice + sprinkle of dried oregano
Turkey pepperoni + grape tomatoes + mozzarella cheese chunks + pizza sauce
The possibilities are endless! Which flavor combination is your favorite? What new lunch skewer ideas do you have?
