A couple months ago, a little lunch trend started in our house. Lunch boxes were coming home containing sandwiches with one bite taken, half eaten portions of fruits/veggies, empty fruit snack pouches (obviously), and all the cheese crackers gone (of course). On good days, I’d find all of the above with the exception of a partially eaten sandwich with only the bread remaining.
I concluded that the bread was just a barrier to get to their beloved honey ham and cheese and that maybe we could try skipping the fruit snacks and crackers and opt for something healthier. The plan: hit the reset button on side options and offer fresh fruit and veggies and popcorn. And if the meat and cheese is all they’re after in a sandwich, I thought that skewers would be a fun way to serve those items and a great way to add a little variety to the meal.
