Chocolate Raspberry Overnight Oats

Serves: 2 servings
  • 1 cup old fashioned oats (use gluten-free if needed)
  • 1½ tablespoon chia seeds
  • 2 tablespoons cocoa powder
  • ½ teaspoon vanilla extract
  • ¾ cup raspberries
  • 2 cups almond milk (I used Almond Breeze unsweetened vanilla)
  • 1 tablespoon maple syrup
  • 2 tablespoons nuts, chopped (I used almonds)
  1. Mix all ingredients together in a large mason jar. Then, put the lid on the jar and give it a good shake! If you don’t have a mason jar, use a large plastic container.
  2. Store the oats in the refrigerator overnight.
  3. In the morning, divide oats evenly between 2 bowls.
  4. Top with chopped nuts and additional raspberries, if desired.
This recipe makes 2 servings but you could easily cut the ingredient amounts in half for a single serving.
