Thai Chicken Pizza with Cauliflower Crust

Serves: 1 pizza
Peanut sauce:
  • ½ cup peanut butter
  • 2 tablespoons soy sauce
  • 1½ tablespoons chili garlic sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon minced ginger
  • 1 garlic clove, minced
  • ¼ cup water
Pizza toppings:
  • 1 large cooked chicken breast, diced
  • 1 bell pepper, thinly sliced
  • 2 carrots, shaved or shredded
  • 2 green onions, chopped
  • 1½ cups mozzarella cheese
  • Fresh cilantro
  1. Preheat the oven to 375.
  2. Prepare the cauliflower pizza crust.
  3. Make the peanut sauce: In a bowl, whisk together all of the peanut sauce ingredients until smooth.
  4. Pile on the toppings: Spread a thick layer of peanut sauce over the crust, but remember to set aside about ⅓ cup for drizzling. Top with chicken, bell pepper, carrots, green onions, and mozzarella cheese.
  5. Bake: Bake the pizza for 8-10 minutes until the cheese is melted to your liking. Drizzle the remaining peanut sauce on top of the pizza. Sprinkle on fresh cilantro.
