Corn and Jalapeño Slaw

  • 6 cups shredded red cabbage
  • 1 ½ cups corn
  • 3 green onions, chopped
  • 3 jalapeno peppers, deseeded with ribs removed and chopped
  • ¼ cup chopped fresh cilantro
  • ⅓ cup crumbled feta cheese
  • Juice of 1 lime
  • Juice of 1 orange
  1. Combine the cabbage, corn, green onions, jalapeño peppers, cilantro, and feta in a large bowl. Squeeze the lime and orange juices over the mixture and toss until combined.
