Apple Cinnamon Granola Bars

Ingredients
  • 2 apples, cut into ¼ inch slices
  • ¼ cup sunflower seed butter (or any nut butter)
  • ¼ cup honey
  • 2 tablespoons coconut oil, melted
  • 1 ½ cups old fashioned oats
  • 1 tablespoon cinnamon, divided
  • ½ teaspoon nutmeg
Instructions
  1. Preheat the oven to 250 degrees.
  2. Place the apple slices in a single layer on a large lined baking sheet. Sprinkle with ½ tablespoon of ground cinnamon.
  3. Bake the apples in the oven for 20 minutes. Then flip the slices over and bake for another 20 minutes until they’re soft and semi-dry. Let the apples cool for about 10 minutes.
  4. While the apples are cooling, add the nut butter, honey, and coconut oil to bowl and stir until the combined and smooth.
  5. Finely chop the apples into little pieces. In a large bowl combine the oats, apples, and ½ tablespoon of cinnamon and nutmeg. Add the nut butter mixture to the oats mixture and stir to combine.
  6. Press the mixture into an 8 x 8 inch baking dish or a small cookie sheet lined with parchment paper. Place the bars in the refrigerator overnight or in the freezer for at least 20 minutes until firm.
  7. Slice into 12 bars. Store in the refrigerator or freezer.
