Southwest Salmon Burgers with Peach Salsa

Ingredients
Salmon Burgers
  • 1 pound salmon, skinned and roughly chopped
  • 1 tablespoon of chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • ¼ cup chopped onion
  • ½ red bell pepper, chopped (any color pepper will do)
  • 1 jalapeño, chopped
  • ¼ cup chopped cilantro
  • ⅓ cup cooked quinoa
  • juice of ½ lime
  • 1 egg
  • 1 tablespoon olive oil
Toppings
  • Peach salsa
  • ½ cup sour cream mixed with 1 chipotle pepper in adobo sauce, chopped
  • Chopped cilantro
  • Sliced limes
Instructions
  1. Place the chopped salmon in a food processor. Pulse a few times until the salmon resembles the consistency of ground meat.
  2. In a large bowl, combine the salmon and all remaining ingredients except the olive oil. Mix with your hands until combined.
  3. Form the salmon mixture into 8 patties.
  4. Heat the olive oil in a pan over medium high heat. I used a large grill pan.
  5. Place 2-4 patties in the pan at a time and cook for 3-4 minutes on each side.
  6. Serve with salsa, chipotle sour cream, chopped cilantro, and a squeeze of fresh lime juice.
