Serves: 26 meatballs
Ingredients
Meatballs
  • 1 pound lean ground turkey
  • Juice of ½ lemon
  • 1 egg
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ cup dried breadcrumbs
  • ¼ cup chopped flat leaf parsley
  • ¼ cup finely chopped onion
  • 1 tablespoon olive oil
Marinara Sauce
  • 2-3 cups of your favorite marinara sauce
or the following ingredients:
  • 1 can (28 oz) of crushed tomatoes
  • ¼ cup wine (any kind will do. I used regular cooking wine.)
  • ½ tablespoons agave nectar
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon pepper
Instructions
  1. Form the meatballs: Combine all meatball ingredients, except the oil, in a large bowl. Use a cookie scoop or heaping tablespoon full of meat to portion out the amount for each meatball. Roll each portion into a ball.
  2. Cook the meatballs: In a sauté pan, heat olive oil over medium-high heat. Place meatballs in the pan and brown them on one side for 2-3 minutes. Flip them and cook another minute on the opposite side. Depending on the size of your pan, you may need to do this in 2 batches. Once all meatballs are browned, transfer them to a plate.
  3. If using marinara sauce from jar: Add the sauce to the pan and stir. Add the meatballs to the sauce. Turn the heat down to low, and cover the pan. Let the meatballs cook for 15-20 minutes.
  4. If making homemade sauce: Add the cooking wine to the pan. Use a wooden spoon to scrape up the brown bits from the bottom of the pan. Add the crushed tomatoes to the pan and stir to combine with the wine. Stir in the agave, Italian seasoning, and pepper. Add the meatballs to the sauce. Turn the heat down to low, and cover the pan. Let the meatballs cook for 15-20 minutes.
