Quick and Easy Apple Butter

Serves: 9 servings
- 4 medium apples, peeled, cored, chopped
- juice of 1 lemon
- 2 cups water
- 1 tsp vanilla extract
- ¼ cup brown sugar
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- Place all ingredients in a saucepan. Stir to combine.
- Bring mixture to a boil.
- Turn down to low and simmer for 45 minutes.
- Transfer the mixture to a food processor, blender, or Nutribullet. Blend until the mixture reaches a smooth consistency.
Serving size: ⅓ cup
