- 1 ½ cup cashews (or any nut), divided
- 6 dates, divided
- ½ cup freeze dried strawberries (I used Simply Balanced)
- 1 ½ tablespoons unsweetened almond milk, divided (see notes)
- ½ cup dried banana chips (I used Danielle)
- 1 ½ tablespoons cocoa powder
- ¼ cup peanuts, divided
Instructions
- For the strawberry flavor: In a food processor, pulse ½ cup cashews until they resemble coarse bread crumbs. Add in 2 dates, and the freeze dried strawberries. Pulse until the mixture is crumbly. Add in ½ tablespoon of almond milk (or more) and pulse until the mixture starts clumping up. Transfer the mixture to a bowl and set aside.
- For the banana flavor: In the same food processor, pulse another ½ cup cashews until they resemble coarse bread crumbs. Add in 2 dates and the dried bananas. Pulse until the mixture is crumbly. Add in ½ tablespoon of almond milk (or more) and pulse until the mixture starts clumping up. Transfer the mixture to a bowl and set aside.
- For the chocolate-peanut flavor: In the same food processor, pulse the last ½ cup cashews until they resemble coarse bread crumbs. Add in 2 dates, cocoa powder, and the peanuts. Pulse until the mixture is crumbly. Add in ½ tablespoon (or more) of almond milk and pulse until the mixture starts clumping up.
- Form the balls: Take one 1 teaspoon each of the strawberry, banana, and chocolate mixtures. Bring them together in the palm of your hand and roll into a balls. Repeat until all mixtures are gone.
Notes
Feel free to use any type of milk you have on hand. You could even use water in a pinch.
