Lightened Up Reuben Dip

Ingredients
  • 1 large head of cauliflower, roughly chopped
  • 4 ounces light cream cheese, softened
  • ¾ cup sauerkraut
  • 1 cup chopped corned beef
  • 1½ cups shredded swiss cheese, divided
Instructions
  1. Cook the cauliflower: Preheat the oven to 375 degrees. Place the cauliflower in a large pot. Pour plenty of water into the pot to cover the cauliflower, and ensure the florets floats to the top. Bring the water and cauliflower to a boil, cooking until fork tender. Drain the cauliflower and puree in a food processor or blender until smooth.
  2. Prepare the dip: Transfer the cauliflower puree to a large bowl. Add in the cream cheese, sauerkraut, corned beef, and 1 cup swiss cheese. Stir to combine.
  3. Bake: Transfer the dip into a medium baking dish. Bake for 15 minutes. Sprinkle remaining ½ cup of cheese on top and bake for another 5 minutes. Serve with mini rye bread slices, pita chips, or crackers.
