Strawberry Banana Chia Granola

Ingredients
  • 4 cups old fashioned oats
  • 3 tablespoons chia seeds
  • ¼ cup ground flax
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 1 banana
  • 6 ripe strawberries
  • 2 tablespoons coconut oil, melted
  • ⅓ cup maple syrup
  • ½ cup dried strawberries
Instructions
  1. Preheat oven to 300 degrees.
  2. In a large bowl, combine the oats, chia seeds, flax, cinnamon and salt.
  3. In a food processor or blender, puree the banana, strawberries, coconut oil, and maple syrup.
  4. Pour the wet ingredient mixture over the dry ingredients.
  5. Using a large spoon or spatula, stir the mixture until the oats and seeds are evenly coated.
  6. Spread the granola mixture out evenly on a large nonstick baking sheet.
  7. Bake in the oven for about 45-60 minutes. Check on the granola every 15 minutes and give it a quick stir with a large spoon and place back in the oven. After stirring at the 45-minute mark, place the granola back in the oven and check it every 2-3 minutes until it’s crisp and golden brown. Toss the granola with the dried strawberries.
