Maple BBQ Pulled Pork, Apple, and Onion Lavash Pizza

Ingredients
  • 2 lavash flatbreads (I used Joseph’s brand )
  • 1 teaspoon olive oil
  • 1 onion, thinly sliced into rings
  • 2 cloves garlic, minced
  • Dash of salt and pepper
  • 3 small (or 2 medium) apples, chopped
  • 1 teaspoon apple cider vinegar
  • 4 ounces pulled pork (see recipe above)
  • 4 tablespoons BBQ sauce, divided (I used Ken Davis brand)
  • 2 tsp maple syrup, divided
  • 1 ounce shredded gouda cheese (or your fave kind)
  • ¼ cup chopped cilantro
Instructions
  1. Heat oven to 350. Place lavashes on lined baking sheets. You may need to use 2 baking sheets. Bake in oven until lavash is golden brown and crispy (About 5-6 minutes). Keep your eye on the lavash as it’s really easy to burn them!
  2. Heat oil in a sauté pan over medium-high heat. Add the onions and garlic to the pan. Sprinkle with salt and pepper. Cook onions about 4 minutes until soft and translucent. Add apples and vinegar to the pan and sauté for another 3 minutes. Set aside.
  3. In a small bowl, combine pork and 2 tbs of BBQ sauce and 1 tsp maple syrup. Set aside. Spread half of the apple and onion mixture over each lavash. Do the same with the pork and shredded cheese.
  4. Bake in the oven for 5 minutes or until cheese is melted to your liking. Drizzle pizzas with remaining BBQ sauce and maple syrup. Sprinkle with cilantro.
Notes
Can't find lavash? Use a lower carb/light tortilla or wrap instead.
