Cranberry Pistachio Granola

  • 3 cups old fashioned oats
  • ¾ cup shelled pistachios, roughly chopped
  • 1 teaspoon ground cinnamon
  • ½ teaspoon all spice
  • ¼ teaspoon salt
  • ⅓ cup cranberry sauce
  • 2 tablespoons oil
  • ¼ cup maple syrup
  • ¼ cup white chocolate chips
  • ⅓ cup dried cranberries
Instructions
  1. Preheat oven to 300 degrees.
  2. In a large bowl, combine the oats, pistachios, cinnamon, all spice and salt.
  3. In a small bowl, whisk together the cranberry sauce, oil, and maple syrup.
  4. Pour the wet ingredients over the dry ingredients. Using a large spoon or spatula, stir the mixture until the oats and pistachios are evenly coated. Spread the granola mixture out evenly on a large nonstick baking sheet.
  5. Bake in the oven for about 45 minutes. Check on the granola every 10 minutes and give it a quick stir with a large spoon.* Granola is ready when it reaches a golden brown color.
  6. When the granola is out of the oven and still on the baking sheet, pour the white chocolate chips and dried cranberries over the granola.** The white chocolate chips may melt a bit, but this is ok because it will help clusters to form. Let the granola cool before serving.
Notes
*Keep a close eye on the granola once it reaches the 30 minute mark. At this point, you may want to check it every 5 minutes to ensure the pistachios don't burn.
**Once out the oven, the granola may seem a bit damp still. As you let the granola cool, it will dry out.
