Pumpkin Chocolate Chip Baked Oatmeal

Serves: 12 servings
- 3 cups old fashioned oats
- 1 teaspoon baking powder
- 1 ½ tablespoons pumpkin pie spice
- ½ teaspoon salt
- 2 eggs
- 2 tablespoons honey, agave, or maple syrup
- 1 can or 15 oz of pumpkin puree
- 2 cups milk (I used unsweetened vanilla almond milk)
- 1 teaspoon vanilla extract
- ⅓ cup chocolate chips
- Additional chocolate chips
- Chopped pecans
- Honey, agave, or maple syrup
- Greek yogurt
- Coconut whipped cream
- Preheat oven to 350 degrees.
- In a large bowl, combine the oats, baking powder, pumpkin pie spice, and salt.
- In another bowl, combine the eggs, honey, almond milk, pumpkin puree, and vanilla extract.
- Pour the wet ingredients into the dry ingredients.
- Pour the mixture into a 9 x 13 baking dish.
- Bake for 30 minutes.
Serving size: 8 squares (toppings not included)
