Ham, Egg, and Arugula Grilled Pizza + A Pizza Birthday Party with Minted (PART 1)

Ingredients
  • 10 ounces of your favorite pizza dough, divided or entire recipe for this flatbread dough (prepped, but not cooked), divided
  • 1 cup mozzarella, divided
  • 1 cup chopped ham, divided
  • ¼ cup bleu cheese or Gorgonzola cheese, divided
  • 4 fried eggs, divided
  • 2 cups arugula, divided
  • ¼ cup balsamic vinaigrette (I usedthis recipe), divided
Instructions
  1. Prep the dough: Divide your pizza dough into 2 equal portions. Roll out each piece of dough to create a thin crust, measuring about 6 x 10 inches.
  2. Heat the grill: Heat the grill to medium-high heat (about 375 degrees). Brush the grill surface with oil or grilling nonstick spray.
  3. Grill the pizza: Transfer the dough to the grill and cook for 2-3 minutes until grill marks appear one side.
  4. Flip the dough and top the crust with ½ cup of mozzarella cheese, ½ cup of chopped ham, and 2 tablespoons of bleu cheese. Place the 2 fried eggs on opposite corners of the pizza.
  5. Close the grill and cook the pizza for 3-4 miutes until the cheese is melted.
  6. Sprinkle 1 cup of arugula over the pizza, and drizzle with 2 tablespoons of balsamic vinaigrette.
  7. Repeat steps 3-6 for the second pizza.
